Andrea di Raimo in the kitchen; young chef juggling the most traditional Italian cuisine.

His innate curiosity brings him to read up some typical recipes and to propose dishes of the day using the products available at the counter. His cooking for Ercoli 1928 is centered strongly on the enhancement of raw materials, based on traditional dishes and enriched by his own personal inspirations. He structures the menu making full of use of Ercoli’s vast selection of products. Entering the shop and seeing the fresh arrivals of the day, inspires the chef to propose dishes that are always different. Every day he takes a tour of the place, between the shelves and the counter, to compose new dishes. Despite its innovation, the solid menu always uses traditional roman cuisine as its point of reference for the genuine; aimed at the maximized celebration of the excellence at our disposal. The French cheese; the cured meats, the fish deli and the fresh pasta serve as daily inspiration. Creating new dishes from extraordinary raw material by bringing out the best, is the philosophy applied the chef of Ercoli’s kitchen.
